Home Baked Melting Moments Biscuits

For a value Valentine's Day gift that comes from the heart, why not bake some old fashioned biscuits, like Melting Moments?  Delicious to give someone as a gift, they are also fun to share while watching a movie or enjoying a picnic together.  Try this recipe and impress!

170g butter, at room temperature;

55g icing sugar;

170g plain flour;

55g cornflour;

1tsp baking powder.

 

  1. Preheat the oven to 180 deg celcius.
  2. Line two baking trays with baking paper.
  3. Sift together the icing sugar, flour, cornflour and baking powder.
  4. Cream the butter in a mixer (or by hand) until it is light and fluffy. Mix in the dry ingredients to make a firm dough.
  5. Take teaspoonfuls of mixture and roll them into balls. Place on the baking trays and press down with a fork.
  6. Bake for 15 - 20 minutes, rotating the trays and swapping them from top to bottom in the oven, after 10 minutes. Once the biscuits are pale gold with slightly brown bottoms, remove from oven and cool on a rack.
  7. Filling: 1 large Tbspn butter; 2 heaped Tbspns icing sugar; 2 tsp boiling water. Melt the butter in a saucepan and add the boiling water. Pour in the sifted icing sugar and mix to form a smooth paste.  Spread small amounts of filling on to half of the biscuits and place another, matching in size, biscuit on top to form a biscuit sandwich. Use enough filling so that it is visible between the top and bottom biscuit.
  8. Let the filling set, then store the biscuits in an air tight container.

A Gift Idea: purchase a noodle box or some little cellophane sealable bags from your local $2 Shop. On Valentine's Day, add as many biscuits that will fit in the box or the bag. Tie a ribbon around the bag and add a swing tag with your message, or place a ribbon around the noodle box and add a swing tag message.  Fun, quick and easy and made with lots of love!
