There are so many energy ball recipes available but which ones are really delicious, quick and easy, and only use a few ingredients? The ones you buy are quite expensive (I bought one, last week, for $4!!). In comparison to buying them. they are so cheap to make and last up to a week. They are healthy and nutritious & provide a much needed energy burst, without snacking on sugary biscuits or lollies. We love these with a cup of tea, at 11 am - they help to stabilise blood sugar levels. Also a good option for school lunches, a work snack, in the car, or just before an exam!
Sweet Apricot, Date & Cacao Energy Balls
2 cups chopped almonds, cashews & walnuts (use a mixture, or any nut that you prefer)
1 cup chopped dates (we mix the dates with prunes)
1 cup chopped apricots (organic is best but supermarket varieties are fine).
2 Tblsps cocao nibs (you can use chocolate chips or smashed chocolate block, if you prefer)
zest of 1 lemon (use orange zest, if you prefer)
pinch of sea salt
2 Tblsp water (enough so that the mixture sticks together but without being sticky)
1/2 cup desiccated coconut
1 tsp cinnamon
