Sugar Free Coconut & Spirulina Energy Bites

As the busy, Christmas season is upon us, a high energy but healthy snack is really important to keep your blood sugar levels even. These healthy Bites have the added benefit of having matcha powder (green tea powder - brimming full of anti-oxidants, vitamins & minerals) & spirulina - a superfood that supports energy levels & alkalinises your system, helping it to function at its best). With no processed or refined sugar, it is dates that create the sweetness. Make a batch, keep them in the fridge and have one at morning tea, or just before you go out for a Christmas function - even if you only end up eating finger food, all night, at least you will have had your healthy ball of greens!

 

Sugar Free Coconut & Spirulina Energy Bites

Ingredients

1/2 cup dates (pitted)

1/2 cup of cashews

1 large teaspoon of coconut oil

1/2 - 1 teaspoons spirulina powder - sold at the supermarket or heath food store

1 heaped teaspoon matcha (green tea powder) - sold at health food stores

1/4 cup desiccated coconut

Method

Soak the dates in a bowl of cold water for 30 minutes, but no longer.

Put the cashews in a food processor and pulse for about 45 seconds, until a thick meal is formed.

Rinse the soaked dates, pat of any extra moisture with a paper towel, and add them to the food processor with the coconut oil, matcha powder & spirulina.

Process the mixture, until it forms a large ball. Roll small pieces of the mixture (about 2 teaspoons in size, or larger if you want large bites) into balls with your hands. Dip fingers into cold water to help prevent the mixture sticking.

Roll each ball in the desiccated coconut and coat them evenly. Place them in an air tight container and chill in the fridge for at least 20 minutes. Store them in the fridge for up to 3 weeks. Makes about 10 Bites (double the recipe, if you want to make a large batch).
