Chocolate Spongy Pud Recipe & tint Vichy Green Cotton Napkin

Following on from your great feedback regarding the Chocolate Cupcake Recipe posted last week, here is a delicious Self Saucing Chocolate Pudding Recipe that I made with my son this evening. Feeling a bit frustrated about the Americas Cup and with the rain pelting down outside, having a baking session in the kitchen was necessary...and another recipe that is so easy but so delicious...

Chocolate Self Saucing Pudding Recipe, from Australian Womans Weekly  "Sweet Old Fashioned Favourites".

60g butter;

1/2 cup milk;

1 tsp vanilla essence;

3/4 cup castor sugar;

1 cup self raising flour;

1 Tbspn cocoa;

3/4 cup brown sugar, firmly packed;

1 Tbspn cocoa, extra;

2 cups boiling water.


  1. Combine butter and milk in a saucepan and stir over heat until the butter has melted.
  2. Remove from heat, stir in essence and castor sugar, then sifted flour and cocoa (use a whisk to remove any lumps).
  3. Spread mixture into greased ovenproof dish (6 cup capacity).
  4. Sift brown sugar and extra cocoa over mixture, gently pour over boiling water (it looks very liquid-like and a bit odd but trust us, it does work).
  5. Bake in a moderate (180 deg) oven for about 40 minutes - make sure it is still syrupy as this is the self saucing chocolate sauce.
  6. Serve immediately with lots of ice cream or cream.

We served our spongy pud with the gorgeous, 100% cotton napkins from tint, a European designed brand. This vichy green colour is a very popular colour for summer 2013..see our vichy green table cloth to complete the look. Bon Apetite!
