Gluten Free Chocolate Brownie

This gluten free version of Classic Chocolate Brownie is an absolute winner, for all dietary preferences. It has been our family's mission to discover the best brownie. So far, this has been declared "the best yet"!  Even better, it is so easy to make. My son baked it, during Lockdown in New Zealand (when, even a 13 year old decided that he needed a break from the xbox). Enjoy - there is nothing quite as heartwarming than warm, freshly made home baking and a cup of tea, in such uncertain times. Stay safe.

Gluten Free Chocolate Brownie

2 cups castor sugar

3/4 cup cocoa powder

1/2 cup rice flour

1 tsp baking powder

4 eggs, lightly beaten

250 g butter, melted

2 tsp vanilla extract

50 - 70 g dark chocolate, chopped

  1. Preheat oven to 160 degrees celcius.
  2. Grease and line a 22cm baking tin with baking paper.
  3. Melt the butter, in a small saucepan. 
  4. In a mixing bowl, sieve the cocoa, flour & baking powder.  Add the castor sugar and mix together.
  5. Add the vanilla essence to the melted butter and pour the mixture into the dry ingredients. Lightly mix together and then add the lightly beaten eggs. Mix to combine.
  6. Use an electric mixer, with the speed on medium - high and mix for 1 minute. The mixture will look glossy. Alternatively, mix by hand.
  7. Pour the mixture into the prepared baking tin. Scatter the chopped chocolate over the top.
  8. Bake for 40 - 45 mins, until just set.
  9. Cool in the baking tin. Cut into squares, once cool. (optional, sprinkle with icing sugar).  Enjoy with a cup of tea.
