Sweetcorn Fritters are an easy, cheap and healthy mid week option, on a warm summer's evening. They are also vegetarian, and use minimal ingredients to create a healthy and fresh summer meal. We love this recipe because, unlike many fritter recipes that use over 1 cup of flour, these are light with only a sprinkling of flour. We use haloumi in the fritters (or use feta), or just leave cheese out, if you prefer. Serve with a fresh salad.
